This recipe for dairy-free low carb pumpkin panna cotta is very easy to make. (Keep in mind that this dessert will need to cool and set for a minimum of three hours.)
Truth be known, I like easy.
Realistically, no matter what your occupation might be, we all live fairly busy lives. Time flies faster every year and we don’t always want to be stuck in the kitchen for hours preparing a meal or make a dessert. I get that. I too am guilty of buying the occasional premade or pre-packaged food. I’ve even been known to feed my kids pancakes for dinner. I am a very busy mom and sometimes life has to give a little.
Given these reasons, along with the passing of years, I am grateful for simplicity. Quick recipes are awesome. This panna cotta fits the bill.
What is panna cotta?
Panna cotta is said to originate from Northern Italy. The name panna cotta means “cooked cream” in Italian.
This dessert is traditionally made with whipping cream, egg whites, and honey. It is then baked in a bain-marie (water bath) at low temps in the oven. Panna cotta is most often served with berries, caramel, or chocolate sauce.
Non-traditional recipes (like mine) are simpler and simmer together cream, milk, sugar, and gelatin. The panna cotta is then cooled until set. They forgo the baking in the oven.
My recipe is not “traditional” since I don’t use dairy, or cream, or any eggs. It is nonetheless delicious IF you like pumpkin (something which is very dependent on my mood). If you must know, this panna cotta tastes a bit like pumpkin pie filling. It is rich and creamy.
In my original recipe, I used coconut cream. I wasn’t a big fan of the coconut aftertaste in this dish though, and wanted to fully enjoy the pumpkin and spices without any aftertaste. (Just a personal preference) You can certainly use coconut cream if you’d like. I switched to cashew cream in place of the coconut cream.
For a nut free option, use the coconut cream or another nut-free alternative.
Dairy Free Low Carb Pumpkin Panna Cotta
Add the erythritol and the pumpkin puree. Mix to combine.
Place the pan on the stovetop on medium heat. You need this mixture to be very hot but not to reach the boiling point.
Remove the pan from the stovetop.
Place some plastic wrap on the top and place in the fridge to cool and set.
They should set about three hours.
